Job Description
Butchery & Production
- Perform professional cutting, trimming, deboning, portioning, and preparation of various meat products to company standards.
- Manage and supervise daily meat production based on sales forecasts and operational needs.
- Ensure consistency, yield optimization, and minimal waste during production.
- Maintain the highest standards of product quality and presentation.
Packaging, Labeling & Documentation
- Oversee correct packaging of meat products according to company and legal requirements.
- Ensure accurate labeling of all products, including product name, weight, expiry date, batch number, and required regulatory information.
- Maintain complete and accurate production records, traceability logs, and packaging documentation.
- Ensure full compliance with food safety regulations, HACCP procedures, and company protocols.
Operational Management
- Organize daily workflow to ensure timely production and order fulfillment.
- Monitor stock levels and coordinate raw material needs.
- Maintain cleanliness, hygiene, and organization of the work area at all times.
- Ensure all equipment is properly used, maintained, and handled safely.
Quality & Compliance
- Ensure strict compliance with food safety standards, hygiene regulations, and internal procedures.
- Monitor product quality and immediately address any deviations.
- Maintain full traceability and documentation for all processed products.
Requirements
- Minimum 3 years of experience in a similar position as a butcher or butcher manager.
- Strong professional butchery skills, including cutting, deboning, trimming, and portioning.
- Experience in meat production, packaging, labeling, and traceability documentation.
- Strong understanding of food safety standards and hygiene requirements (HACCP knowledge preferred).
- High level of responsibility, organization, and attention to detail.
- Ability to manage production efficiently and work in a fast-paced environment.
- Leadership skills and ability to supervise operations.
- Professional, reliable, and disciplined work ethic.
