The Sushi Cook is responsible for preparing, producing, and presenting high-quality sushi dishes, ensuring consistency, exceptional taste, and attractive presentation while upholding food safety and hygiene standards.
Key Responsibilities
Prepares a variety of hot and cold dishes within the position’s spectrum, including ingredient preparation such as washing, peeling, weighing, measuring, and mixing, in accordance with recipes, sushi-specific techniques and presentation standards.
Prepares and cooks food according to recipes, quality standards, presentation standards, and food preparation checklist.
Prepares special sushi orders or substitute items.
Tests sushi items for freshness, flavour balance, and proper texture to ensure they meet quality standards.
Operates sushi-specific equipment such as sushi rice cookers, sharp sashimi knives, and rolling mats, as well as general kitchen appliances like ovens, stoves, grills, microwaves, and fryers when necessary. Regulates the temperature of the appliances.
Performs other reasonable job duties as requested by the kitchen executive team.
Qualifications & Experience
Diploma in Culinary Arts
Minimum of 5 years’ experience in a similar position in a 4- or 5-star hotel or in well-established restaurants
Excellent command of the English language, both written and spoken
Good communication skills
Good knowledge of HACCP procedures
Ability to obtain and maintain a food handler certification
Good customer service orientation with a commitment to guest satisfaction.
