Leonardo Hotels & Resorts Mediterranean is dedicated to delivering outstanding culinary experiences that reflect quality, creativity, and consistency. The GrandResort Limited Edition by Leonardo Hotels is seeking an experienced and passionate Executive Chef to lead daily kitchen operations, manage the culinary team, and ensure the highest standards of food quality, hygiene, and guest satisfaction.
Job Summary:
The Executive Chef is responsible for overseeing all kitchen operations within their assigned outlet, ensuring efficient food production, excellent presentation, cost control, and compliance with hotel standards. This role involves leadership, menu execution, staff training, and close collaboration with management to deliver an exceptional dining experience.
Key Responsibilities:
- Manage and supervise daily kitchen operations, ensuring smooth and efficient workflow.
- Lead, train, motivate, and evaluate kitchen staff, fostering teamwork and professional development.
- Ensure consistent quality, taste, and presentation of all dishes according to hotel standards.
- Assist in menu planning, recipe development, and seasonal menu updates in coordination with the Executive Chef.
- Control food costs, minimize waste, and monitor portion control.
- Ensure compliance with Health & Safety, food hygiene, and sanitation regulations at all times.
- Oversee ordering, receiving, storage, and proper use of ingredients and supplies.
- Conduct regular quality checks on food products and kitchen equipment.
- Ensure proper maintenance and cleanliness of kitchen areas and equipment.
- Communicate effectively with F&B service teams to ensure timely and accurate service.
- Address guest feedback and complaints related to food quality promptly and professionally.
- Implement GDPR requirements regarding protection of personal and operational data.
- Follow hotel procedures for accident reporting for staff and guests.
- Perform any other duties assigned by Management related to kitchen operations.
Skills & Qualifications
- Diploma or degree in Culinary Arts, Hospitality, or equivalent professional training
- Minimum of 2–3 years’ experience in a similar role within a hotel or high-volume restaurant.
- Strong leadership and team management skills.
- Excellent knowledge of food preparation, presentation, and kitchen operations.
- Strong understanding of food safety, HACCP, and Health & Safety regulations.
- Ability to work under pressure in a fast-paced environment.
- Strong communication and organizational skills.
- Passion for culinary excellence and guest satisfaction.
