• Run daily floor operations, ensuring consistent service standards and guest experience
• Manage staff scheduling, training, and performance across FOH and coordination with kitchen
• Own labour cost, food cost, and wastage against agreed targets
• Handle guest issues, reviews, and escalations directly
• Oversee stock ordering, supplier relationships, and inventory control
• Drive daily/weekly sales performance and report against KPIs to head office
• Ensure compliance with hygiene, health & safety, and licensing standards
• Support hiring and onboarding of floor staff
• Implement and enforce SOPs, ensuring consistency across shifts
