Job Profile:
At Ararat – The Signature Collection, we are seeking a skilled and passionate Sushi Chef specializing in raw sushi and sashimi to join our culinary team.
The ideal candidate will be responsible for the preparation and presentation of high-quality sushi dishes, ensuring exceptional standards of freshness, taste, hygiene, and visual presentation in line with a luxury 5-star dining experience.
Job Description:
· Prepare and present raw sushi, sashimi, and related Japanese dishes according to established recipes and standards
· Ensure the highest quality, freshness, and safe handling of all raw seafood and ingredients
· Maintain strict hygiene, cleanliness, and organization of the sushi station at all times
· Follow all food safety and hygiene regulations consistently
· Assist in monitoring stock levels of raw ingredients and report requirements to the Executive Chef
· Ensure consistency, portion control, and presentation standards across all sushi items
· Collaborate with the kitchen team to ensure smooth and efficient service
· Support menu development and seasonal sushi offerings when required
· Maintain a professional, calm, and efficient workflow during service periods
Person Specification:
· Proven experience as a Sushi Chef in a reputable hotel, fine dining restaurant, or Japanese cuisine setting
· Strong expertise in raw seafood preparation, knife skills, and sushi techniques
· Solid understanding of food safety, hygiene, and raw ingredient handling standards
· High attention to detail and commitment to presentation excellence
· Ability to work efficiently in a fast-paced, high-pressure kitchen environment
· Culinary diploma or formal sushi training is considered an advantage
· Strong teamwork and communication skills
· Passion for Japanese cuisine and continuous professional development
Work Environment:
